
Slow Cooked Italian Jerk Chicken (Main Dish Recipe)
For the following recipe, I found all the ingredients at my local grocer.
Equipment Needed:
Electric Slow Cooker / Crockpot
Large Mixing Bowl
Tea Kettle
Ingredients:
10 lb bag of chicken quarters
½ cup of Lemon Juice
Yellow Curry Powder
2 Tbsp. of Jamaican Jerk Seasoning
1 cup of Italian Bread Crumbs
Your favorite seasonings (i.e. Italian Seasoning, Lawry’s Seasoning Salt, or Tony Chachere’s Original Creole Seasoning)
A pair of rubber gloves (optional)
Preparing the Meat:
Clean and separate the chicken quarters (thighs and leg). Depending on your preference this may include taking off the skin. Place the separated pieces in a large mixing bowl. Boil a kettle of water, once boiled pour over the chicken, adding half a cup of lemon juice. Let the mixture sit for 5-10 minutes and then drain. This should clean the chicken further as well as tenderizes it enough to help with the coating of the seasonings.
Seasoning the Meat:
Completely cover the meat with a dusting of your favorite seasoning, the Jamaican Jerk Seasoning, Yellow Curry and Italian Bread Crumbs. There should still be a small amount of excess water at the bottom of the bowl. Begin to knead the seasoning into the chicken until it is completely coated.
Cookin’ Time:
Place all the contents of the bowl into your slow cooker adding a cup of water and place on its cover. Your slow cooker should be set to its lowest setting. Let the meat cook until the meat is tender enough to fall off the bones.
This may take up to 5 hours depending on your slow cooker. You may want to check on the meat periodically during the process basting it with its own juices.
Yields: Usually 10-12 pieces of chicken
