    Hearty Sweet Potato Meatloaf (Main Dish Recipe)

    For the following recipe, I found all the ingredients at my local grocer.  It is not solely my own creation; it was adapted from a recipe I found on Pinterest. Equipment Needed: 8×8 or 9×13 inch Baking Pan (Glass is my preference) Large Mixing Bowl Microwave A pair of rubber gloves (optional) Paring Knife Ingredients: 3 lbs of Ground Beef or Ground Turkey 3 Medium Sized Sweet Potatoes/Yams Mashed 1/4 Cup of Melted Butter 2 Eggs 1/4 Cup of Oyster Sauce or Barbeque Sauce 1/3 Cup of Italian Bread Crumbs 1 Minced Onion 2 Minced Garlic Cloves Your favorite seasonings (i.e. Italian Seasoning, Lawry’s Seasoning Salt, or Tony Chachere’s Original…

      For the following recipe, I found all the ingredients at my local grocer. Equipment Needed: Electric Slow Cooker / Crockpot Large Mixing Bowl Tea Kettle Ingredients: 10 lb bag of chicken quarters ½ cup of Lemon Juice Yellow Curry Powder 2 Tbsp. of Jamaican Jerk Seasoning 1 cup of Italian Bread Crumbs Your favorite seasonings (i.e. Italian Seasoning, Lawry’s Seasoning Salt, or Tony Chachere’s Original Creole Seasoning) A pair of rubber gloves (optional) Preparing the Meat: Clean and separate the chicken quarters (thighs and leg).  Depending on your preference this may include taking off the skin.  Place the separated pieces in a large mixing bowl.  Boil a kettle of…

    For the following vegetable side dish recipe, I found all the ingredients at my local grocer. Ingredients: ½ Bag of Glory Foods Kale (1lb) or 1 16 oz bag 2 slices of uncooked and diced Jennie O Turkey Bacon 1 Tbsp. of your favorite seasonings (i.e. Italian Seasoning, Lawry’s Seasoning Salt, or Tony Chachere’s Original Creole Seasoning) 1 diced plum tomato 4 Tbsp. of Annie’s Naturals Fat Free Raspberry Balsamic Vinaigrette A splash of Vegetable Oil Directions: Place the Kale in a large sauce pan on low heat; layering all the other ingredients adding the vegetable oil as a dressing last, stir then cover.  Continue to heat until tender.       For a quick, healthy and filling breakfast alternative try the following recipe.  All items were purchased at my local grocer. Equipment Needed: Ice Crushing Blender Measuring Cup Ingredients: 1 Cup of Ice 2 Cups of Unsweetened Almond Breeze Vanilla Milk 2 Cups of Frozen HEB Brand Mixed Fruit (Peaches, Strawberries, Cantaloupe, Pineapple and Grapes) No Sugar Added ½ Cup of HEB Brand Strawberry and Raspberry Low fat Granola Take all the Ingredients and place in your blender.  Place on HIGH or your Smoothie setting until blended.  Stir if needed. Total Calories per Serving: 105 Yields 4 servings

    This recipe yields one loaf of “Whole Wheat Peanut Butter Banana Bread”.  I have adapted it over time from my original that was just plain.
